Ingredients

lb
Italian sausage
or your preferred type
4
cups
kale
chopped
2
cans
15 oz each white beans, rinsed and drained
1
onion
chopped
4
cloves
garlic
minced
4
cups
chicken broth
1
tsp
thyme
1
tsp
rosemary
Salt and pepper to taste

olive oil
Instructions
Heat olive oil in a large pot over medium heat. Add sausage and brown, breaking it apart as it cooks. Once browned, remove and set aside.
In the same pot, sauté onion and garlic until soft and fragrant, about 5 minutes.
Add the chicken broth, white beans, thyme, and rosemary. Stir well and bring to a simmer.
Return the sausage to the pot and add the chopped kale. Simmer for another 5-10 minutes until the kale wilts and the flavors meld together.
Season with salt and pepper to taste.
Notes
You can substitute the sausage with turkey sausage for a lighter version.
Add red pepper flakes for a bit of heat.
