Preheat your oven to 350°F (180°C). Grease a 9x5 inch loaf pan with butter or non-stick cooking spray, and line it with parchment paper.
In a medium bowl, whisk together the Odlums self-rising flour and ground cinnamon. Set aside.
In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
Beat in the eggs one at a time, then stir in the vanilla extract.
Fold the mashed bananas into the butter and sugar mixture until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Be careful not to overmix.
Pour the banana bread batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Once cooled, slice the Odlums banana bread and serve as desired.
