Ingredients

  • 1 3/4 cups Odlums self-rising flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas mashed (about 1 1/4 cups)

Instructions

  • Preheat your oven to 350°F (180°C). Grease a 9x5 inch loaf pan with butter or non-stick cooking spray, and line it with parchment paper.
  • In a medium bowl, whisk together the Odlums self-rising flour and ground cinnamon. Set aside.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Fold the mashed bananas into the butter and sugar mixture until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Be careful not to overmix.
  • Pour the banana bread batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
