Ingredients

  • 2 medium sweet potatoes peeled and grated
  • 1 small onion finely chopped
  • 1 egg
  • 1/4 cup all-purpose flour or gluten-free alternative
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  • Prepare the Sweet Potatoes: Peel and grate the sweet potatoes using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel.
  • Mix Ingredients: In a large bowl, mix the grated sweet potatoes, onion, garlic, cumin, paprika, salt, and pepper. Add the egg and flour, and mix until well combined.
  • Shape Fritters: Form the mixture into small patties, about 2 inches wide.
  • Fry the Fritters: Heat olive oil in a skillet over medium heat. Place the fritters in the pan, cooking for 3-4 minutes on each side until golden brown and crispy.
  • Drain and Serve: Transfer cooked fritters to a paper towel-lined plate. Serve immediately with your favorite dipping sauce, such as sour cream or yogurt.
