Instructions
Prepare the potatoes:
Wash the purple sweet potatoes thoroughly under cold water to remove any dirt. Peel the potatoes if you prefer a smoother texture, or leave the skins on for added nutrients and texture.
Cook the potatoes:
Cut the potatoes into equal-sized chunks for even cooking. Place them in a large pot, and cover with cold water. Add a pinch of salt to the water to enhance the flavor.
Bring the water to a boil over medium high heat. Once boiling, reduce the heat to medium-low and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender.
Drain and Mash:
After cooking, drain the potatoes in a colander and then add them back to the pot. Add the butter, milk, or cream, and a pinch of salt and pepper.
