Ingredients

  • 4 medium purple sweet potatoes
  • 2 tablespoons unsalted butter
  • 1/4 cup milk or cream adjust for desired consistency
  • To taste add salt and pepper.
  • Optional: 1-2 cloves garlic minced
  • Optional: Fresh herbs such as parsley or chives for garnish

Instructions

  • Prepare the potatoes:
  • Wash the purple sweet potatoes thoroughly under cold water to remove any dirt. Peel the potatoes if you prefer a smoother texture, or leave the skins on for added nutrients and texture.
  • Cook the potatoes:
  • Cut the potatoes into equal-sized chunks for even cooking. Place them in a large pot, and cover with cold water. Add a pinch of salt to the water to enhance the flavor.
  • Bring the water to a boil over medium high heat. Once boiling, reduce the heat to medium-low and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender.
  • Drain and Mash:
  • After cooking, drain the potatoes in a colander and then add them back to the pot. Add the butter, milk, or cream, and a pinch of salt and pepper.
  • Mash the potatoes using a potato masher or an electric hand mixer until smooth and creamy. If you want a richer mash, you can add more milk or butter to reach your desired consistency.
  • Optional Flavor Enhancements:
  • For added flavor, you can sauté the minced garlic in a little butter before adding it to the mash. This will give the dish a subtle garlic flavor.
  • Stir in fresh herbs like parsley or chives to add a fresh, vibrant touch to the mash.
  • Serve:
  • Transfer the purple sweet potato mash to a serving dish. Garnish with additional herbs if desired, and serve hot as a side dish to your favorite main course.
