Ingredients

  • 1 gallon water
  • 1/2 cup kosher salt
  • 1/2 cup brown sugar
  • 1/2 cup pure maple syrup
  • 1 tablespoon black peppercorns
  • 2 cinnamon sticks
  • 2 bay leaves

Instructions

  • Heat water, kosher salt, and brown sugar in a pot until dissolved.
  • Add maple syrup, black peppercorns, cinnamon sticks, and bay leaves. Stir well.
  • Let the brine cool completely.
  • Submerge turkey in the brine and refrigerate for 12-24 hours.
  • Rinse turkey thoroughly before cooking.
