Honey joys are a classic Australian sweet treat made with a simple combination of cornflakes, honey, butter, and sugar. These bite-sized morsels have a delightful crunchy texture and a delicious, gooey honey flavor.

Ingredients

  • 4 cups cornflakes crushed
  • 1/2 cup honey
  • 1/4 cup butter
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract

Instructions

  • In a saucepan, combine the honey, butter, and sugar over medium heat. Stir the mixture continuously until it comes to a gentle boil and the sugar has fully dissolved.
  • Remove the saucepan from the heat and stir in the vanilla extract.
  • In a large mixing bowl, gently crush the cornflakes.
  • Slowly pour the honey mixture over the crushed cornflakes, gently folding the ingredients together until the cornflakes are evenly coated.
  • Using a spoon or small ice cream scoop, portion the honey joy mixture into individual mounds on a baking tray lined with cupcake liners (if using).
  • Refrigerate the tray for at least 30 minutes to allow the honey joys to set.
  • Once the honey joys have set, they are ready to be served and enjoyed!
