Ingredients

  • For the Honeydew Boba:
  • 1 cup honeydew melon cubed
  • ½ cup tapioca starch
  • 2 tbsp honey
  • 2 tbsp water
  • For the Boba Tea:
  • 4 cups water
  • 2 green tea bags
  • 2 cups unsweetened almond milk
  • 2 tbsp honey or alternative sweetener to taste
  • Ice cubes

Instructions

  • Make the Honeydew Boba: Blend the honeydew melon in a food processor until smooth. In a saucepan, combine the honeydew purée, tapioca starch, honey, and water.
  • Cook the Boba: Cook over medium heat, stirring constantly, until the mixture thickens and forms a dough-like consistency.
  • Shape the Boba: Remove from heat and let it cool slightly. Knead the dough until smooth. Roll into small balls (about ½ inch in diameter).
  • Cook the Boba Pearls: Bring a pot of water to a boil. Add the boba pearls and cook for about 15-20 minutes, or until they become translucent and chewy. Drain and rinse with cold water.
  • Brew the Tea: Steep the green tea bags in 4 cups of hot water for 3-5 minutes. Remove the tea bags and let the tea cool.
  • Assemble the Boba Tea: In a shaker, combine the cooled tea, almond milk, and honey (or sweetener). Add ice cubes and shake well.
  • Serve: Pour the tea into glasses, add the cooked honeydew boba pearls, and enjoy!
