Ingredients

  • 1/2 cup black tapioca pearls
  • 4 cups water for cooking pearls
  • 2 cups water for brewing tea
  • 4 black tea bags or 2 tablespoons loose leaf black tea
  • 2 cups almond milk unsweetened or lightly sweetened
  • 1/4 cup simple syrup adjust to taste
  • Ice cubes

Instructions

  • Cook the Tapioca Pearls: Bring 4 cups of water to a rolling boil in a saucepan. Add the tapioca pearls and stir gently. Cook according to package directions (usually 20-30 minutes), then reduce heat and simmer for 15-20 minutes, covered.
  • Prepare an Ice Bath: While the pearls simmer, fill a large bowl with cold water and ice.
  • Test and Strain: Once the pearls are cooked through (chewy with no hard center), drain them and immediately transfer to the ice bath. Let them cool for about 10 minutes.
  • Brew the Tea: While the pearls cook, bring 2 cups of water to a boil. Steep the tea bags or loose leaf tea for 3-5 minutes. Remove the tea bags or strain the tea leaves.
  • Combine and Sweeten: In a pitcher, combine the brewed tea, almond milk, and simple syrup. Stir well to dissolve the syrup. Taste and adjust sweetness as needed.
  • Assemble Your Boba: Divide the cooked tapioca pearls between two glasses. Pour the almond milk tea mixture over the pearls. Add ice cubes.
  • Enjoy! Serve immediately with boba straws.
