Ingredients

medium green tomatoes
1
cup
all-purpose flour
2
large eggs
1
cup
cornmeal
1
teaspoon
salt
1/2
teaspoon
black pepper
Oil for frying
vegetable, canola, or peanut
Instructions
Wash the green tomatoes and slice them into 1/4 to 1/2-inch thick rounds.
In one bowl, mix flour, salt, and pepper.
In a second bowl, whisk the eggs.
In a third bowl, place the cornmeal.
Dip each tomato slice in flour, then egg, and finally coat in cornmeal.
Heat oil in a frying pan over medium heat.
Fry the coated tomato slices for 3-4 minutes on each side until golden brown.
Drain on paper towels and serve hot.
