Ingredients

  • 3 medium green tomatoes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying vegetable, canola, or peanut

Instructions

  • Wash the green tomatoes and slice them into 1/4 to 1/2-inch thick rounds.
  • In one bowl, mix flour, salt, and pepper.
  • In a second bowl, whisk the eggs.
  • In a third bowl, place the cornmeal.
  • Dip each tomato slice in flour, then egg, and finally coat in cornmeal.
  • Heat oil in a frying pan over medium heat.
  • Fry the coated tomato slices for 3-4 minutes on each side until golden brown.
  • Drain on paper towels and serve hot.
