Ingredients

  • For the Pancake Mix:
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the Pancakes:
  • 1 1/2 cups milk buttermilk or regular milk
  • 2 large eggs
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • Optional add-ins: blueberries chocolate chips, or bananas

Instructions

  • Step 1: Prepare the Pancake Mix
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • If you're making your pancake mix in advance, store it in an airtight container and keep it in a cool, dry place. The mix can be stored for up to 3 months.
  • Step 2: Make the Pancake Batter
  • In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
  • Gradually pour the wet ingredients into the dry pancake mix, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  • Step 3: Cook the Pancakes
  • Preheat a non-stick griddle or frying pan over medium heat. Lightly grease the surface with butter or cooking spray.
  • Pour 1/4 cup of pancake batter onto the griddle for each pancake. If you're adding mix-ins like blueberries or chocolate chips, sprinkle them onto the pancakes at this stage.
  • Cook the pancakes for about 2-3 minutes on the first side, or until bubbles form on the surface and the edges start to look set. Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
  • Remove the pancakes from the griddle and keep them warm in a low oven while you cook the remaining batter.
  • Step 4: Serve and Enjoy
  • Serve the pancakes hot, topped with your favorite toppings such as maple syrup, fresh fruit, whipped cream, or a pat of butter.
  • Enjoy your fluffy homemade pancakes with a side of bacon, sausage, or eggs for a complete breakfast.

Notes

  • Don’t Overmix: Overmixing the batter can result in tough pancakes. Stir until the ingredients are just combined, leaving some lumps in the batter.
  • Use Fresh Ingredients: Fresh baking powder and baking soda are crucial for fluffy pancakes. If your leavening agents are old, your pancakes may not rise properly.
  • Customize Your Pancakes: Get creative by adding ingredients like cinnamon, nuts, or citrus zest to the batter for unique flavors.
