In a small bowl, mix the diced apple, brown sugar, cinnamon, nutmeg, lemon juice, and salt.
Butter one side of each slice of bread.
Place one slice of bread, butter side down, on the pie iron.
Spoon half of the apple mixture onto the bread, leaving a small border around the edges.
Top with another slice of bread, butter side up.
Close the pie iron and trim any excess bread.
Cook over the campfire for about 3-4 minutes on each side, or until the bread is golden brown and crispy.
Carefully remove the apple pie pocket from the pie iron and let it cool for a minute before enjoying.
Repeat the process with the remaining ingredients to make the second pocket.
