or shredded cooked chicken

buffalo sauce

cheddar or mozzarella

Salt and pepper to taste

Instructions
Preheat your oven to 400°F (200°C).
Rice the cauliflower if using fresh, or thaw and drain if using frozen.
In a bowl, mix riced cauliflower, chicken, buffalo sauce, cheese, green onions, and spices.
Form into bite-sized balls and roll in breadcrumbs if desired.
Place on a baking sheet and bake for 20-25 minutes until golden.
