Ingredients

  • 2 cups riced cauliflower fresh or frozen
  • 1 pound ground chicken or shredded cooked chicken
  • ½ cup buffalo sauce
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/4 cup green onions chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs optional

Instructions

  • Preheat your oven to 400°F (200°C).
  • Rice the cauliflower if using fresh, or thaw and drain if using frozen.
  • In a bowl, mix riced cauliflower, chicken, buffalo sauce, cheese, green onions, and spices.
  • Form into bite-sized balls and roll in breadcrumbs if desired.
  • Place on a baking sheet and bake for 20-25 minutes until golden.
