Ingredients

  • 6-8 boneless skinless chicken thighs
  • 1 cup apricot preserves or jam
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, whisk together the apricot preserves, soy sauce, Dijon mustard, garlic, thyme, and black pepper until well combined. Set the sauce aside.
  • Season the chicken thighs with salt and pepper to taste.
  • Place the seasoned chicken in a baking dish or large oven-safe skillet. Pour the apricot sauce over the top, making sure to evenly coat the chicken.
  • Bake the chicken in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the sauce has thickened slightly. Baste the chicken with the sauce a few times during the cooking process.
  • For a caramelized, glazed effect, you can broil the chicken for the last 2-3 minutes of cooking, keeping a close eye on it to prevent burning.
  • Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Serve the apricot chicken hot, garnished with fresh thyme or parsley if desired.
