Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together the apricot preserves, soy sauce, Dijon mustard, garlic, thyme, and black pepper until well combined. Set the sauce aside.
Season the chicken thighs with salt and pepper to taste.
Place the seasoned chicken in a baking dish or large oven-safe skillet. Pour the apricot sauce over the top, making sure to evenly coat the chicken.
Bake the chicken in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the sauce has thickened slightly. Baste the chicken with the sauce a few times during the cooking process.
For a caramelized, glazed effect, you can broil the chicken for the last 2-3 minutes of cooking, keeping a close eye on it to prevent burning.
Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Serve the apricot chicken hot, garnished with fresh thyme or parsley if desired.
