Apple Spice Brine

A flavorful brine with apple juice and warm spices for a subtly sweet turkey.

Ingredients

  • 1 gallon apple juice
  • 1/2 cup kosher salt
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon whole cloves
  • 2 oranges sliced
  • 2 cups cold water

Instructions

  • In a large pot, combine apple juice, kosher salt, and brown sugar. Heat until dissolved.
  • Add cinnamon, cloves, and orange slices. Stir well.
  • Let the mixture cool and add 2 cups cold water.
  • Submerge turkey in the brine and refrigerate for 12-24 hours.
  • Rinse turkey thoroughly before cooking.
